Salmon in Tomato Sauce - Keto Friendly


This Salmon in Tomato Sauce keto friendly recipe is my son's favorite. It is a modified version of the Moroccan Salmon that you can find online. It is so filling and has the taste of more. Very easy to prepare. Goes well with spaghetti squash.

    • 1 lbs. of skinless salmon (if it is frozen - thaw it)

    • 1 chopped yellow onion

    • 3 chopped large tomatoes

    • 1 chopped large celery sprig

    • 1/2 bunch of parsley - chopped

    • 1/2 bunch of cilantro - chopped

    • 5 cloves of garlic - minced

    • 1 lbs. of Brussels sprouts

    • 1/2 cup olive oil

    • 1-2 cups of water - as needed

    • (if you want a thicker sauce, mix 1 tbs. of coconut flower with 1/4 cup of water and add it to the tomato sauce)

    • Salt, pepper, garlic powder, turmeric, paprika, cumin, ginger

Method: In a large pot sauté the onion until golden, add the garlic. Add the tomatoes, brussels sprouts and the herbs, continue stirring for 5 minutes. Add 1 cup of water and the spices, cover and cook until the tomatoes are completely cooked - about 20 minutes.   Add the fish and add some more water until the fish is almost covered with the liquids. Reduce the heat and cook for another 30 minutes.

Serve hot over cauliflower mash or spaghetti squash.
