Salmon in Tomato Sauce - Keto Friendly
This Salmon in Tomato Sauce keto friendly recipe is my son's favorite. It is a modified version of the Moroccan Salmon that you can find online. It is so filling and has the taste of more. Very easy to prepare. Goes well with spaghetti squash.
1 lbs. of skinless salmon (if it is frozen - thaw it)
1 chopped yellow onion
3 chopped large tomatoes
1 chopped large celery sprig
1/2 bunch of parsley - chopped
1/2 bunch of cilantro - chopped
5 cloves of garlic - minced
1 lbs. of Brussels sprouts
1/2 cup olive oil
1-2 cups of water - as needed
(if you want a thicker sauce, mix 1 tbs. of coconut flower with 1/4 cup of water and add it to the tomato sauce)
Salt, pepper, garlic powder, turmeric, paprika, cumin, ginger
Method: In a large pot sauté the onion until golden, add the garlic. Add the tomatoes, brussels sprouts and the herbs, continue stirring for 5 minutes. Add 1 cup of water and the spices, cover and cook until the tomatoes are completely cooked - about 20 minutes. Add the fish and add some more water until the fish is almost covered with the liquids. Reduce the heat and cook for another 30 minutes.
