Sautéed Zucchini - Low Carb, Paleo, Keto Friendly Recipe

This is another way of preparing zucchini. Zucchini doesn't have a strong flavor so it can absorb the flavors from the spices and sauce. This one has a little touch of soy sauce and that makes all the difference. I used to prepare it before I started keto, and I am very happy that I can still prepare it while doing keto. This is a very nice side dish and very low carb recipe.

    • 3 large zucchinis sliced diagonally 1/4 inch

    • 3 eggs beaten

    • 2 tbs. soy sauce

    • 1/4 cup olive oil

    • 3 garlic cloves minced

    • Salt, pepper, garlic powder, ginger

On a large skillet heat the oil. Add the zucchini and garlic. Stir constantly - don't let the zucchini get soft, just a little brown on the edges.

In a separate bowl mix the eggs, soy sauce and the spices. Pour the egg mixture on top of the zucchini and continue stirring,  scrape the egg from the pan and continue until the egg dries up.

Serve hot. It is best if eaten the same day.
