Guilt-Free Strawberry Coconut-Cream Mouse

When following the ketogenic diet all the cravings for sweets go away. However, sometimes I feel the need to spoil my soul so then I enjoy this guilt free dessert.

    • 2 cans of coconut cream - unsweetened

    • 2 cups of mashed strawberries

    • Grind of one lemon

Refrigerate the coconut cream cans overnight.

The next day, very gently separate the cream from the liquid (do not throw it away - you can use it for coffee as additional fat). Put the coconut cream in a mixer and whisk it to a frothy cream.

Wash the strawberries and remove the little stems with the leaves. Dry them up.

Mash the strawberries, but leave chunks.

Mix the strawberries with the cream and the lemon grind and place them in containers of 3oz each. (This recipe yields about 15 portions of 3oz each). You can freeze them and have a nice little strawberry frozen dessert.

If you prefer and have guests, you can use fancier bowls.
