Low Carb Meatballs with Tomato Sauce
Who said that when following the ketogenic diet you cannot have good food? These meatballs are low carb - fit for the ketogenic diet and taste great! I like to cook them in a slow cooker (crock pot) but you don't have to.
1/2 onion chopped
3 cloves of garlic
1/4 cup olive oil
1/2 bunch parsley chopped
1/4 cup minced celery
2-3 large tomatoes chopped (you can use canned tomatoes)
1 large eggplant cubed
1 cup of water
Salt, pepper, garlic powder, paprika, basil, 1 bay leaf, oregano

1 1/2 lbs. ground chicken (or beef)
1/2 bunch parsley
1 tbs. of coconut flour
2 eggs

The sauce: Sautee the onion until golden with the olive oil. Add the garlic and continue stirring. Add the tomatoes, eggplant, parsley and season to taste. Add the water. bring to a boil and lower the temperature.
The meatballs: In a separate bowl mix the ingredients for the meatballs. With wet hands create little balls (about 1 1/2 inch balls). At this point you can fry the meatballs and then place them slowly inside the sauce or you can place them directly in the sauce without frying them at all.
Cook for about 1/2 hour on medium temperature and then lower the temperature to simmer. I like at this point to transfer this to a crock pot and forget about it until it is time to eat (about 4-5 hours on the low temperature).
How to serve: Serve with spaghetti squash (bake a spaghetti squash for 1 hour at 350F - take out from the oven, slice it in half, remove the seeds and serve), or can be served with cauliflower mash.
It is great as a main dish or as a side for a cocktail party.
