Cauliflower Mash, Cauliflower Puree, Cauliflower Rice

When I was searching online for this recipe I found many options that did not appeal to me. I don't like white food. I think that food should look colorful and white is not my favorite color for food - unless it is vanilla ice cream  (you can see in the long list of pictures - my pictures are all colorful). So I tried many recipes and none came out in a way that I can repeat it. But this one, oh man! this one is out of this world - the cauliflower gets the flavor from the chicken and it tastes heavenly!

    • 1 head of cauliflower grated in a food processor (like rice)

    • 4 pieces of chicken with the skin - Do not use chicken breast - it is not fatty enough for keto

    • Olive oil

    • Salt, pepper, garlic powder

Preheat the oven to 350F.

Spread the cauliflower on the baking pan. Sprinkle spices and oil. Mix well. On a separate bowl rub the chicken with spices and oil and place it on top of the cauliflower.

 Bake for one hour and 20 minutes. Serve hot.
