Low Carb - Keto Friendly - Roasted Chicken with Vegetables

Roasted chicken with vegetables - This is a classic dish. My family loves oven roasted chicken and to make it low carb I replaced the potatoes for zucchini and peppers. To this dish you can actually add any vegetables that you like such as Brussels sprouts, cauliflower, mushrooms.

    • 4 chicken thighs with the skin

    • 1 large zucchini sliced diagonally about 1/4 inch thick

    • 2 peppers with mixed colors cut in 4

    • 1 medium onion cut in 8

    • 1/4 cup olive oil

    • 3-4 cloves of garlic - minced

    • Salt, pepper, garlic powder, paprika

Preheat the oven to 350F. In a bowl mix all the ingredients. Place on a baking pan and bake for 1 1/2 hours on 350F.

Serve with a salad of greens.
