Low Carb - Oven Roasted Salmon

This is a basic method of roasting salmon in the oven. The recipe includes so few ingredients that it is perfect for a low carb - ketogenic diet. This recipe is quick and easy to prepare and you really don't have to be an expert in the kitchen for it to succeed.

    • 1/2 lbs. salmon (skinless)

    • Juice of 1/2 lemon

    • 1 yellow pepper (optional) sliced

    • 1 tomato sliced (optional)

    • 1/4 onion sliced (optional)

    • 1/4 cup olive oil

    • Salt, pepper, garlic powder, paprika

Preheat oven to 400F and grease a baking pan with some oil.

In a bowl combine the spices, olive oil, juice of a lemon and the pepper. Mix well.

Add the salmon and rub it with the oil mixture.

Place the salmon in a greased baking pan and cover it with the tomatoes.

Bake for 30 minutes. If you overcook it - the fish dries up.
