Refreshing Israeli Salad
This refreshing salad is a typical dish in the Mediterranean cuisine. It is very simple to prepare and the dressing brings out the freshness of the vegetables. Goes well with chicken skewers or any roasted meat.
2 nice large firm tomatoes - chopped into tiny cubes
1 nice large firm cucumber - chopped into tiny cubes
1/2 red onion - chopped into tiny cubes
3 cloves of garlic
Juice of 2 lemons
1/4 cup of olive oil
A few leaves of mint - chopped (optional)
Chop all the vegetables into tiny cubes (the smaller the better). In a bowl mix all the dressing ingredients and pour on top of the vegetables. This refreshing salad needs to be eaten immediately. If you want to prepare it in advance for a later diner - do not mix it with the dressing. You can store the chopped vegetables without the dressing for 2 days.
