Baked Salmon Croquettes
This recipe is very easy. I used salmon, but you can choose any fish you like. Also, I baked them, but if you prefer you can fry them. Always remember that there are no rules, its all about personal preference and my recipes can be just an inspiration.
1 lbs. salmon
1 green onion - chopped
1 tbs. of coconut flour
1/4 bunch of parsley - chopped
3 eggs beaten
1/2 onion - sautéed
Salt, pepper, turmeric garlic powder
Warm the oven to 350F.
In a food processor chop the fish to a mash.
Sautee the onion until golden. Add the parsley and the green onion. In a separate bowl mix the eggs. Add the spices, coconut flour and the fish.
With wet hands form little patties and place them in a large flat pan covered with parchment paper.
Bake for 40 minutes until golden. You can flip them a little before they are finished to give them the extra browning on their face. Serve with salad, for lunch or for breakfast with my chunky avocado dip.
Freezes well.
