Low Carb - Oven Roasted Vegetables for a ketogenic diet!

I am not a chef and I like very simple recipes. I like when there is not too much of a mess in the kitchen to clean up after cooking and this dish fits all my requirements! I buy fresh Brussels sprouts, fresh cauliflower and fresh zucchinis. Sometimes I do this recipe with all the vegetables and sometimes only one or two kinds of vegetables. This is a nice side dish for chicken skewers or baked salmon.

    • fresh Brussels sprouts

    • 1 whole cauliflower separated into florets

    • 3-4 large zucchinis sliced

    • 1/2 cup olive oil

    • Salt, pepper, paprika, garlic powder

Preheat oven to 350 F. In a large bowl mix the oil and spices. Add the vegetables and mix well to coat all the vegetables. Spread all the coated vegetables on a large baking sheet. Bake for 45 minutes and serve.
