Stir-Fried Chicken with Onions

I prepared this stir-fried chicken with onions on a day when I had to go to the produce store and I did not have vegetables around to cook with. It turned out pretty good and I adopted it as a nice quick recipe for chicken.

    • 4 boneless chicken thighs sliced lengthwise

    • 1 chopped yellow onion

    • 4 minced garlic cloves

    • 2 tbs. of soy sauce

    • 1/4 cup olive oil

    • 1/4 cup water

    • Salt, pepper, garlic powder, ginger, turmeric

On a large pan preheat the oil. Add the onion and sauté until golden. Add the chicken and the garlic. Continue stirring until the chicken is cooked for about 10 minutes. Add the water, spices and soy sauce. Cover and continue cooking for about 15 minutes more.

Serve hot with spaghetti squash or cauliflower mash.
