Chicken and Zucchini Stir-Fry - Low Carb - Keto Friendly

This is a quick and easy recipe. The only vegetables here are zucchini, celery and yellow onions. It goes well with spaghetti squash or cauliflower mash. It can done for a simple dinner meal or you can make a large batch when you have guest over.

    • 4 chicken thighs sliced thin

    • 1 coarsely chopped onion

    • 1/4 cup olive oil

    • 5-7 garlic cloves

    • 1 zucchini sliced in 1 inch long thin stripes

    • 1 sprig celery sliced in 1 inch long thin stripes

    • 1/2 bunch of parsley

    • 1/2 cup of water or you can use the chicken broth

    • Salt, pepper, soy sauce turmeric, ginger powder, garlic powder and any other spice that you like such as cayenne pepper

In a big pot sauté the onion with the olive oil until golden.

Add the garlic and the chicken. Continue stirring for another 10 minutes until the chicken is thoroughly cooked. Add the spices and stir well. Add the zucchini, celery and stir. Add the water and the parsley and cover to cook for another 15 minutes. When the celery is soft - the meal is ready - about another 15 minutes.
