Chicken Broth - Very Easy
When I first started looking up recipes for the ketogenic diet I stumbled upon the recipe of bone broth. I tried many recipes from various sites, and I realized that I don't like broth from beef or the type of broth that is like gelatin. I know that my version is not the 'original' type of broth, but it still contains a lot of minerals and electrolytes and this is a good reason to drink it. My version is made from chicken only. It helped me with my keto flu and now that I am fat adapted I drink it while doing intermittent fasting or when I feel that I want to eat something out of habit, but I am not hungry. I use a large crockpot and I prepare enough so I have for a few days. Keeping it on mason jars helps preserving it for at least two weeks.
A large crockpot (mine is 8 quarts)
2 chicken thighs with the skin washed and clean
1 carrot cut in pieces

1/2 onion cut in chunks

1 leek washed and cut in pieces

1/2 bunch of parsley

1 zucchini cut in pieces

5-8 cloves of garlic peeled and chopped

Salt, pepper, garlic powder, turmeric
After chopping all the ingredients put them in a crockpot. Add the spices to taste. Cook it on high for 5 hours and then lower the temperature and cook it overnight. The next day remove all the ingredients and keep the chicken aside for a nice chicken salad. Drain all the ingredients and keep only the stock. Pour the stock into mason jars and close the lids while it is still hot. Once cooled keep it in the refrigerator.
