Brisket and Vegetables
I had guests over diner one night and I prepared this dish. These friends new that I am following a ketogenic diet and they thought that I am depriving myself from food because I lost weight so fast. When they saw me eating this, I saw in their faces that they could not believe what I was doing. I think that they were expecting me to eat some tasteless and sorry food, but I surprised them! Sometimes we are in need for a good recipe that will work for all the family and friends, even for those who are not following the ketogenic diet. Eating this can show those who are skeptical that you are actually eating real food when you follow keto. This recipe is easy, the meat comes out so tender and full of flavor.
3 lb. brisket
1 head of garlic cloves
Olive oil
Salt, pepper, garlic powder to taste
Preheat the oven to 350F.
In a bowl mix all the ingredients and rub the meat with it.
Place it in a baking dish and cover with aluminum foil. Bake for 2 hours until the meat temperature is 160F. Uncover the roast and continue baking for another 30 minutes.
Pour the juice on top the roast. Let it rest a little and slice it thin before serving. I like to serve it with my roasted vegetables.
Freezes well.
