Low Carb - Keto Friendly Shakshuka
This is a very nice Israeli dish - Shakshuka - it fits the ketogenic diet perfectly! This particular picture was provided by my son and his wife while they were eating one Saturday morning. It consist of a very spicy and flavorful tomato sauce with eggs.
1 large yellow onion
2 large tomatoes
3 eggs
2-3 cloves of garlic

1/4 cup olive oil
Salt, pepper, garlic powder, cayenne (optional)
Sautee the onions until golden and add the minced garlic. Add the tomatoes and the spices and lower the temperature. Cook until the juices dry up - about 15-20 minutes. Put the eggs on top of the tomatoes and cover with a lid. Continue cooking until the eggs get the consistency that you want. They can be cooked well, or they can stay a little softer. You can serve it as a breakfast with chunky avocado dip and a nice Israeli salad. Below are some ideas that can go well with this Shakshuka.
