Keto - Low Carb Mediterranean Salad

This refreshing salad is a typical dish in the Mediterranean cuisine. It is very simple to prepare and the dressing brings out the freshness of the vegetables. Goes well with chicken skewers or any roasted meat.

    • cubes of 1 grilled chicken thigh

    • 5-6 nice green leaf lettuce leaves cut into large pieces

    • 1/2 red onion - chopped into tiny cubes

    • kalamata olives

    • Yellow, orange and red bell peppers

    • balsamic vinegar

    • Greek dressing

    • banana peppers (optional)

In a large mixing bowl combine all the ingredients and mix well. This salad can also be prepared with leftover chicken.
