Keto - Low Carb - Chicken Lettuce Wraps
My son loves to be in the kitchen and create culinary masterpieces. Everyday, after work, he visits the produce store, checks what is looking good today and from that he gets his inspiration. This time, the lettuce was the winner! This recipe is easy and the sauce is the game-changer!
2 nice large firm tomatoes - chopped into tiny cubes

3 chicken thighs cut in large chunks

lettuce leaves

bean sprouts

1 yellow onion - cubed

2 green onions chopped
2 tablespoons of soy sauce
1 tbs. of Dijon mustard
1/4 tsp. grated ginger root
3 cloves of garlic
2 1/2 tbs. of water
1/4 cup of olive oil
Salt, pepper
Sautee the onions until golden. Add the chicken and continue sautéing until it is cooked thoroughly (about 10 minutes). Set up the lettuce leaves in a platter and put some cubes tomatoes on each leaf. Add the chicken, bean sprouts and green onions.
Dip the wraps in the dressing, or if you prefer, pour a little with a spoon on each wrap. The red sauce on the wrap is hot sauce that my son added to his wrap!
The dressing: In a bowl mix all the ingredients and whisk well. (You can mix it all in a blender).
