Keto Friendly Roasted Eggplant Salad
These roasted eggplants can definitely be used instead of fried eggplants. They are very easy and simple to prepare and are suitable when following a ketogenic diet. These eggplants can be used for a base of a meat pie, for a salad with olive oil and lemon or serve them as they are as a side.
2 large eggplants (do not peel)
1 cup extra virgin olive oil
Salt, pepper, garlic powder
Set a large baking sheet with parchment baking paper. In a large bowl mix the oil and the spices. Wash and cut the eggplants into circles. Dip each piece of eggplant into the oil and spices mixture. Put the eggplant circles on the sheet one next to the other. Bake for 45 minutes in 350 F degrees. Cool and serve.
