Strawberries with Coconut Cream
Who said that when you are following the ketogenic diet you cannot have dessert? This simple dish is a copycat of the actual strawberries and cream, but with the coconut cream it gets the same fame without the dairy.
1 lbs. of good looking strawberries
2 cans of coconut cream unsweetened
Method: Place the cans of coconut cream in the refrigerator overnight. Next day, open the cans and gently scoop the cream into the blender bowl being carful not to include the liquid of the coconut cream. You can use that for the bulletproof coffee or smoothies. Whisk it just as you would any whipping cream to a soft and smooth consistency.
Wash the strawberries, remove the stem and cut them lengthwise in half.
Place the strawberries in little bowls and top them with a dollop of the coconut cream. If you like you can use Stevia or Splenda to sweeten the cream.
