Homemade Mayo - Fail Proof!
This homemade mayo is very simple to prepare and it can be used for a ketogenic diet. You know exactly what are the ingredients and it has no additives, sugar or starches.
You will need any type of blender. It takes very few ingredients and can be used for my egg salad, chicken salad and as a basis for any dressing that you like. The secret for a successful result is to start with room-temperature whole eggs.
2 whole eggs at room temperature (very important!)

1 cup of extra virgin olive oil
3/4 tsp. of mustard
1 lemon - only the juice

Salt, peeper, garlic powder
Put the eggs in a blender. Add all the ingredients except the oil. Pulse the blender just to combine all the ingredients. Once combined start adding the oil a few tablespoons at the time until you get an emulsion. At that point you can start adding the oil a little faster until all the oil is incorporated. Keep refrigerated for 1 week.
