Crunchy Green Bean Salad
If you like to eat cold green beans in a salad - you will like this one. I like the crunchiness of the beans and it makes a perfect side for any meat dish.
1 lb. of fresh green beans
2 hard boiled eggs
1/4 bunch of parsley
1/4 cup olive oil
1/4 cup mayo
Juice of 1 lemon
Salt, pepper, garlic powder
Cook the green beans in boiling water for a few minutes until they get to be a little soft (You don't want them to lose their crunchiness). Drain the water and let them cool. In a bowl mix all the dressing ingredients: Eggs, parsley, oil, lemon juice, mayo (I like to use my homemade mayo) and spices.
Put the green beans in the dressing and mix well. Store in an airtight container for up to 2-3 days.
